About the Recipe
This lemon curd is great for lemon tart of any kind of lemon dessert. Even you can use this as a filing or set in a pie crust into a sheet pan and cut into Lemon Bars. Its delicious
Ingredients
510 g Sugar
2.5 g salt
1 g xanthan gum
1 g Turmeric
150 g Lemon Juice
1 ea Zest of Lemon
375 g Eggs
4.5 ea Sheets gelatin
Preparation
Step 01
Let gelatin sheets bloom in ice cold water while you setting everything else up
Step 02
In a medium bowl mix together sugar, salt, xanthan gum, and turmeric
Step 03
In another bowl mix lemon juice and eggs and zest 2 lemons in and use a hand blender of whisk to mix all together.
Step 04
Combine step 01 ingredients and step 02 ingredients together in a medium size pan and start cooking on a medium heat while stirring slowly and constantly. Mean while squeezy the gelatin sheets together to get rid of exes water and keep to a side. when the lemon mix come to a boil turn off the heat and add gelatin and stir well.
Step 05
Let the lemon curd cool down. whisk with a hand whisk before using it. You can put the lemon curd into a piping bag and pipe into a small tart shell and into a large tart shell and put some whipped cream on top and decorate with something as you you like and enjoy.
