Coconut and Jaggery Pudding - (Watalappan)

About the Recipe

This is one of my favorite dessert with coconut. Try this out, it's very simple to make. You will be glad that you did.

Ingredients


10 oz Jaggery

1 cup water

4 pc cloves

4 cardamom

1 pc cinnamon

1/4 tsp nutmeg

8 oz coconut milk

1/2 cup milk

2 oz molasses

8 eggs

1 pinch salt

4 Tbsp chopped cashew to decorate


Preparation

  1. Chop jaggery roughly and get into a medium size pot with water and spices and bring it to a boil and simmer it for 4-5 minutes just to get the flavors of the spices into the liquid. Cool the liquid down to room temp

  2. Mix all the other ingredients except cashew with the jaggery liquid and mix well and strain.

  3. Fill baking dishes 2/3 of the way, sprinkle some chopped cashews on top. Put disshes in to baking pan and fill 1/3 way with water into the pan and bake at 300⁰ F for about 40 to 50 minutes


Note : if you are not a big fan of these spices in the recipe you can omit any if you would ike to.
