Chocolate espresso in a box everyone would love it

Ingredients

Chocolate boxes

First thing first. you need to make the chocolate boxes first. you need good quality dark chocolate any good brand would work like Valrhona, Cacao Barry, Cacao Noel. would recommend between 60% to 65% percentage of chocolates. you will temper the chocolate and make the boxes. Just fill the plastic boxes with chocolate and empty out the box quickly you only need a thin layer of chocolate on the inside walls and let it set and harden.

Espresso Mousse


6 each egg yolks

100 g sugar

250 g mascarpone cream

250 g heavy cream

50 g sugar

3 sheets of gelatin

50 g Heavy cream

1 tsp Trablit coffee extract




Preparation

Method :

1.Whisk egg yolks and sugar using a hand electric mixer or stand electric mixer to a ribbon stage

2. whisk mascarpone and heavy cream with sugar to a soft peak

3.heat up 2nd part of the heavy cream and add bloomed gelatin and dissolve

4.Mix yolk mixture into heavy cream and mascarpone cream. just fold in do not work with it too long. add gelatin and trablit and mix until all combined.


fill thin layer of mousse into the bottom of the chocolate box and top with a piece of chocolate cake cut into exact size. repeat the same process until the box is almost full. finish with a layer of cake on top. let it set in a refrigerator.


when mousse is set in the chocolate box, unmold it from the plastic box.

served with a couple of spoon shaped whipped cream and something crunchy like coffee crumble and coffee jelly or something. dust some espresso powder on top of the whipped cream. I'm sure your guests would LOVE it
